Best Burger

Ingredients

ground beef
sesame seed buns
1/2 cup of grated Monterrey jack cheese
1/4 cup BBQ sauce
season salt to taste
cracked black pepper
onion powder to taste

 

Directions

1. Combine the ground beef, grated cheese, bbq sauce, and seasonings. Shape patties that are about 1 inch thick.

2. Then it is very important to push a 1/2 inch indent into the center of the patty–this is what prevents the patty from becoming a dome. These burgers stay extra moist because the bbq sauce and cheese are mixed in with the meat.

3. Wait for the skillet to get super hot and then apply a very thin layer of butter to the pan. Place the patties on the pan, indent side up.

4. Reduce heat to medium and allow this side of the patty to cook for about 4-6 minutes, but make sure it doesn’t burn. Then flip the burger over and cook until done.

 

BBQ Ribs

Ingredients

1 cup ketchup
3 tablespoons molasses
1 tablespoon cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon dark-brown sugar
1 1/2 teaspoons Dijon mustard
1/2 teaspoon hot pepper sauce (such as Tabasco)
1/4 teaspoon liquid smoke
4 pounds country-style pork ribs

Directions

1. In a small bowl, stir together ketchup, molasses, vinegar, Worcestershire sauce, sugar, mustard, hot sauce and liquid smoke.

2. Place pork ribs in the slow cooker insert and pour 1 cup sauce over top, reserving the rest for later. Cover and cook on HIGH for 6 hours or LOW for 9 hours or until very tender.

3. Remove ribs from slow cooker and brush with reserved sauce.

 

Gazpacho Pasta Salad

Ingredients

8 ounces pipette or cavatappi pasta
3 tablespoons olive oil
2 tablespoons red-wine vinegar
3 clove garlic, finely chopped
1/2 teaspoon paprika
1/2 teaspoon salt
1 14 1/2 ounce can diced tomatoes with jalapeno chiles
1 large sweet green pepper, cored, seeded and cut into 1/2-inch pieces (about 1 cup)
2 medium celery ribs, cut into 1/2-inch pieces (about 1 cup)
1/2 seedless cucumber, peeled, quartered lengthwise and sliced crosswise into 1/2-inch-thick pieces (about 1-1/4 cups)

Directions

1. Cook pasta in large, deep pot of lightly salted water until al dente, firm yet tender, following package directions. Drain; rinse with cold water; drain.

2. Meanwhile, in large bowl, whisk oil, vinegar, garlic, paprika and salt. Add tomatoes with their juice, green pepper, celery and cucumber; toss to mix. Add pasta; toss to coat.

3. Garnish with parsley, if desired. Serve immediately or refrigerate, covered, 30 minutes to chill.

 

Super Easy Crock pot Chicken Tacos

Ingredients

8 pieces of Skinless Chicken Breasts
1 Pack of taco seasoning
1 16-ounce jar of salsa (I usually use chipotle salsa for some heat)

Directions

Dump everything into a crockpot and give it a little stir to blend the seasoning with the salsa. Cook on high for 2 to 4 hours or on low for 5 to 6 hours (make sure to check the chicken while it cooks because every crockpot cooks differently, we wouldn’t want your food to burn). When done, the chicken should shred easily when stirred with a fork.

 

Fresh Guacamole

Ingredients

3 piece ripe avocados, pitted and peeled
1 piece small onion, finely chopped
1 piece medium tomato, seeded and chopped
1 piece serrano chile, seeded and minced
3 tablespoon fresh lemon juice
1 tablespoon chopped fresh cilantro
1 teaspoons salt
1 tablespoon fresh pomegranate seeds (optional) tortilla chips

Directions

Place avocados in a medium bowl, and mash well with a fork. Add onion and next 5 ingredients; stir well to combine. Cover and chill until ready to serve.

 

Easy Salsa

Ingredients

1 14 oz can diced tomatoes
1 10 oz can orginal Rotel
1/2 small onion, roughly chopped
1 clove garlic, peeled and smashed
1/2-1 jalapeno, seeded or not (depends on how spicy you like it)
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon ground cumin
small to medium size handful of cilantro, washed
juice of 1 lime

Directions

Put all the ingredients in the base of a food processor or good blender and pulse to combine for 30 seconds or so until all the ingredients are finely chopped and salsa is desired consistency. Taste for seasoning and adjust to taste. Serve with chips or over tacos.
